Chicken Caprese Chopped Salad

Quick & Easy Summer Salad #3

Here is the recipe number three from the rotisserie chicken.  I have made three quick and easy delicious salads with just one rotisserie chicken.  For us, it was about not having to use any cooking devices in our home since the A/C was out.  For others, this may come in handy on those busy work and school nights.  These salads are so economical and could easily be made ahead of time and could even be taken on the go.  This one is not your traditional caprese salad either, I added a few goodies to make it even better.  Of course, you can add your own spin on it for you and your family.

Chicken Caprese Chopped Salad

Here are the ingredients I used for this Quick & Easy Dinner Salad:

  • Rotisserie Chicken (I used what was left of my rotisserie chicken on this night, approx 1-1.5 cups of chopped chicken)
  • 2 heads romaine lettuce, thinly sliced then chopped
  • 1 large avocado
  • 12 mini mozzarella balls halved or quartered
  • 1 Cup cherry tomatoes halved or quartered
  • 1/2 Cup fresh basil, thinly sliced
  • 44 slices bacon, cooked and chopped
  • Balsamic Vinaigrette dressing

    Directions:
    In a large bowl, toss lettuce, chopped chicken, mozzarella, tomatoes, basil, and bacon.  Drizzle with balsamic vinaigrette and serve.

    Note: I used microwave bacon, Kirkland Bacon from Costco, its my go to for cooking, less hassle and just as good and fresh.  You could also substitute with the Real Bacon in a bag from the grocery store or omit altogether.  All of these salads could be prepared without any protein and served as sides as well.
