Blueberry Chicken Feta Chopped Salad
Quick & Easy Summer Salad
This summer the A/C unit in our home decided to stop working. Of course it was during the hottest parts of our summer nearing 109 degrees during the day, so cooking in our kitchen was definitely out of the question. The first few days we ate out, but after we learned the new unit would not be available for a few weeks (yikes!) I decided to start thinking of things I could fix at home that would not require any kind of stove or oven. This salad was so good and the best part is, all I had to do was throw all the ingredients together. I actually created three salads from one Costco rotisserie chicken!
Blueberry Chicken Feta Chopped Salad
Here are the main ingredients:
- 1 Rotisserie chicken (I used 1 breast from the rotisserie for this salad)
- 8 Cups chopped lettuce of your choice (I cheated and used the Organic
- Mediterranean Crunch Chopped Salad Kit from Costco)
- 2 Cups fresh blueberries
- 3/4 Cup crumbled feta cheese
- 3/4 Cup candied pecans or walnuts (optional)
- Basil Balsamic Vinaigrette or vinaigrette of your choice
Directions:
Mix all of the ingredients together in a large bowl and toss in your favorite vinaigrette dressing.
Quick, easy and a great meal for a hot summer day! Stay tuned for the other two salads I created with my 1 rotisserie chicken.
Note: I would have added sliced strawberries but I did not have any on hand. As a matter of fact, any berry would go nicely on this salad and you could easily omit the chicken or use a fish in its place.
