BBQ Chicken Chopped Salad

Quick & Easy Summer Salad #2

If you are following along, you already know that this is the summer we lost our A/C!  As a result I came up with some quick and easy no cook dinners in order to beat the heat indoors.  This is the second salad I made from my one rotisserie chicken.  BBQ Chicken salad is one of my husbands favorites so I decided I could easily throw one together for us without too much effort and I am telling you, this was delicious!

BBQ Chicken Chopped Salad

Here are the ingredients I used to create this quick dinner salad:

  • 1 Rotisserie chicken ( I used about 3/4 – 1 whole breast of the rotisserie chicken)
  • 2 heads romaine lettuce, thinly sliced then chopped
  • 1 Can whole kernel corn, drained (use approx 1 cup)
  • 1 Can whole black beans, drained and rinsed (use approx 1 cup)
  • 1 Cup cherry tomatoes, chopped in halves or quarters
  • 1 Cup shredded mexican blended cheese
  • 1/4 Cup red onion, finely chopped
  • BBQ sauce
  • Ranch dressing

Directions:

Take your chicken breast, remove the skin and chop up into bite size pieces.  In a large bowl, toss the chicken, lettuce, beans, corn, cheese, tomatoes, and onion.  Drizzle with BBQ sauce and Ranch dressing.
